Adzuki Brown Rice
Adzuki beans are small reddish-brown beans which are good for the kidneys. They should be soaked overnight or for 5 hours with the water discarded before cooking. For a small quantity like this 1 hour of pre-soaking should suffice.
2-3 tbsp brown rice
2 tbsp adzuki beans
1 cup water
small piece of ginger
1. In a pot boil the beans with ginger and a cup of water. Check on the water accordingly and add more if necessary. Cook for about 15 minutes.
2. Add the rice to the beans and cook till both rice and beans are soft. Remove the ginger piece, mash and serve.
A pressure cooker can be used to speed up cooking but water adjustment will be necessary.
