  Lentil Puree
 
  Lentil and Vegetable puree
 
  Carrot, parsnip and Chickpea Mix
 
  Adzuki Brown Rice
 
  Spinach and lentils

Golden Pea Soup


2 tbsp dried yellow split lentil

½ cup peeled, chopped carrot

Celery peeled and chopped

1 tsp chopped onion

½ sweet potato peeled and cubed

2 tbsp cream corn

Dash of pepper

1. Boil the lentil till tender. Add the vegetables and simmer for about half an hour till vegetables are soft.

2. Drain a little water if necessary and puree to a creamy consistency

3. This sweet soup is full of protein goodness. For added flavor you can sauté the onion with bay leaf and thyme in a little bit of olive oil.
