Carrot, parsnip and Chickpea Mix
1 carrot peeled and chopped coarsely
½ parsnip peeled and chopped
2 cups water, crushed ginger
½ can or pre-boiled chickpeas (drained and rinsed)
Parsley, grated cheese (optional)
1. Place the vegetables and water into a pot and bring to boil. Over a low flame simmer for 8 minutes or till tender.
2. Add the chickpeas, ginger and cook for further 10 minutes until the vegetables are really tender. Remove from stove and allow to cool slightly.
3. Remove the ginger piece, puree the vegetables and chickpeas with the cooking liquid until smooth.
4. Garnish with grated cheese and parsley
