Baby Omelet
2 egg (whites separated)
Finely chopped parsley or any other herb
Unsalted butter
Egg yolk
4 tbsp full fat milk
Finely cut broccoli
1. In a skillet warm the butter, fry the broccoli for a minute or two.
2. Crack the egg into a mixing bowl without the white, add milk and parsley and beat well. Add this to the skillet let it cook on one side.
3. Flip to the other side and cook for a further minute and then using a spatula remove and serve.
4. Other forms of grated vegetables can be used in place of the broccoli e.g. carrot or pureed peas
