Egg Yolk Fruit Mash
Introduce egg yolk with familiar fruits such as avocado, peach, sweet potato, banana, or pear purees.
1 – 2 egg yolks
1-2 tbsp milk (optional)
Butter or olive oil
Fruit or vegetable puree of your choice
1. Cook the egg first. You can choose either of the two methods.
2. Separate the yolk from the white using the shell or the egg separator, and beat the yolk with some milk if preferred. In a skillet, heat some butter or olive oil and add the yolk and scramble-fry till it has changed color and is properly cooked. Add the fruit puree and serve
3. Alternatively you can boil the egg(s), remove the shell and scoop out the hardened yolk from the hard-boiled egg. Mash the yolk. Add the fruit puree and serve. To add bulk, you may add cooked mashed brown rice or any cereal to the mix.
4. As an alternative, lightly scramble egg yolk in the skillet and when almost done, add 1-2 tbsp grated cheese and serve.
