Creamed parsnip with Tofu
1 small parsnip peeled and diced
25 gm tofu
1 tablespoons fresh orange juice
100ml (or less) full fat milk
1. Steam parsnips until soft or for about 10 minutes. In a separate bowl drain tofu piece and crumble it.
2. For a younger baby you may want to blend the parsnip pieces together with the tofu and juice till smooth. Gradually add milk to make a smooth thick puree.
3. Serve your baby immediately. Add more milk if required to adjust the thickness.
4. You may want to substitute parsnip with melon or pumpkin slice.
Tofu is a versatile food item that will combine easily with vegetables and fruits alike. Hard tofu is cheese like in texture and firmness. For an older baby you can mash the parsnips and tofu more coarsely and increase the orange juice to create a stronger flavor.
